That's awesome, but if a product table in Marvikshop has 30 or more table fields and the oscommerce table I'm inserting has a lot less, that's a lot of work to populate the missing table fields and that's just one table out of several. It's a huge pain and I've spent 18 hours trying to do this.

If you want to move you old shop. You have to substitute your own structure with the one with MarvikShop. Because you use MarvikShop now. All the tables fields structure of Marvikshop must be in there.This is primair. It's not necessary to add more from your old shop. But it can be nice to do so, when you want to add some other contributions in Marvikshop from the Oscommerce site. I did so.
